Artisan Cheese Making Class at Ramekins

Description:
In this two-day course, students will learn the basics of cheese making, how to build on cheeses they have already made to create more complex cheeses, and ways to use hand-crafted cheeses in a variety of dishes. Chef Mary Karlin will show you the magical world of making cheese, which can often times be remarkably simple even in ones's own kitchen. Students will taste made-ahead cheeses at the beginning of class and at the conclusion of the workshop have their own cheeses to take home and enjoy.
It is recommended to take both classes. Day 1 will provide foundation ingredients for the second class.

- Panir: Firm Cow’s Milk Cheese from India
- Ricotta: Soft Cow’s Milk Cheese
- Chèvre: Soft, Cultured Goat’s Milk Cheese
- Feta: Firm, Brined Goat’s Milk Cheese
- Crème Fraîche: Cultured Cow’s Milk Cream
- Mary’s Mixed-Milk Mélange: Herb- Encrusted Cow’s and Goat’s Milk cheese
Day 2:
- Mozzarella: Plain and Stuffed
- Burrata
- Ricotta Salata
- Tea-Smoked Chèvre
- Feta Marinated with Rosemary Olive Oil and Sundried Tomatoes
- Cocoa Rubbed Melange
