Traditional tapas are given a new character by Chef Rose with recipes that he has developed to combine the passionate and colorful cuisine of the Northern Spanish Basque country with Sonoma’s natural abundance. You’ll get hands-on experience in creating an irresistible array of new taste treats.

- Albondigas en Cazuela: Flattened Meatballs of Organic Ground Local Lamb and Grass Fed Beef, Onion, Garlic and Red Pepper flame Broiled into a Cazuela of Spanish Sofrito Sauce
- Arroz con Pollo: Local Chicken Wings Dusted with Spanish Pimenton, Minced Garlic and Sea Salt with California Short Grained Rice, Homemade Organic Chicken Stock, Sofrito Sauce and Spanish Saffron
. - Tortilla Española: Spanish Fritatta of Organic Local Eggs, Potatoes, Caramelized Onions and Garlic
- Calamaris en su Tinta: Stuffed Tubes of Monterey Bay Squid filled with Rice, Sofrito Sauce and Minced Green Olives Ladled with Garlic Black Squid Ink Sauce
- Miguelitos: Organic Rose Ranch Kale with Onions, Garlic, Flour, Beadcrumbs and Eggs Mixed into Dough then Poached in Chicken Stock with Organic Swiss Chard-Garlic Sauce
