In this class, Chef Agustín Gaytán will teach you recipes that honor the tradition and authenticity of prehispanic Mexico. Many of the meats commonly used in contemporary Mexican cooking, such as chicken,pork, and beef were not present in Mexico prior to the arrival of Spanish settlers. While those meats were not available, other meats were present, such as duck and turkey, which remain a signifigant part of Mexican cooking today.
