Yes We Can: Summer Condiments at Relish
A great relish, ketchup or BBQ sauce can elevate summer grilling from good to amazing.
Chef and professional canner Elissa Rubin-Mahon leads this class focused on creating and canning condiments with natural methods (which means no added pectin), using local farm-fresh vegetables and fruit. Participants will make each of the condiments from scratch as chef Elissa discusses how to select and prepare the various ingredients for canning. Then we go thru the entire canning process with each item. Typical of all canning, there's down-time as we wait for each of the items to steam can and cool. Elissa will present information on the basics of canning such as temperature, pH, cleanliness and safety that apply to canning virtually anything. Participants will take home a jar of each item, copies of all recipes and methods, and the knowledge and experience to can at home.
