for the popular 4th annual Salt and Sparkling Wine Dinner. Chef Falvo delves extensively into the myriad uses of salt: as a flavoring agent, a preservative and as an accent. Demonstrating the wisdom behind the long classic pairing of champagne and caviar, over the course of the five-course meal guests will experience how well the two tastes pair together. Enjoy Cured sturgeon, Hawaiian blue prawns with house-made citrus-nori salt and ginger vinaigrette, Quail with foie gras vinaigrette, Berkshire pork three ways, and Ricotta cheesecake with strawberry fleur de sel ice cream all paired with Gloria Ferrer wines.
